Lecithin CAS 8002-43-5
Lecithin CAS 8002-43-5 is a viscous liquid or solid with a light yellow to brown appearance. It has hydrophilicity and certain emulsifying ability (physical properties), and is composed of various phospholipid components. It is prone to oxidation in the air and can participate in a variety of biochemical reactions. Food-grade lecithin is derived from soybeans and other plant sources. It is a complex mixture of acetone insoluble phospholipids, mainly composed of phosphatidylcholine, phosphatidylethanolamine and phosphatidylinositol, and contains other substances in different proportions, such as triglycerides, fatty acids and carbohydrates.
